A Barista Journey: Recycle, Reuse, Regenerate

Renato Sumania, also known as “Rey”, is a technical vocational graduate of Barista NC II residing in Cagayan de Oro City. He is also an HRM graduate and trained to become a barista at TESDA.

Right now, he focuses on being a Barista although he’s also an active and expert Bartender. Rey is a speaker and facilitator for coffee appreciation, latte art demonstration, bartending, flairtending, wine appreciation, cocktail preparation and specialty coffee familiarization seminars. In addition, he also does exclusive trainings in some colleges and universities as well as, various establishments around the country.

Rey also became a beverage consultant and mixologist at the Equilibrium Intertrade Corporation, a company in the Philippines which supplies coffee equipment, imported consumables, and supplies coffee to different restaurants, hotels and resorts in the country.

Rey and three other Mixologists in Manila and Cebu were also sent to other countries like Singapore, Vietnam, Thailand, Sri Lanka and India to train and share their knowledge of recipe formulation of Torani Italian Syrup, a product supplied and carried by Equilibrium. After years of working in a corporate company, he finally concentrates on his business.

He currently owns Jamaican F&B Training Center, Inc. which he started in 2003 as a consultancy firm and the school has five registered programs in Technical Education and Skills Development Authority (TESDA) which are; Barista NC II, Bartending NC II, Food and Beverage NC II & NC III and MTP Barista NC II.

Fast forward to 2018, he now has hundreds of graduates who are now working locally and abroad and one of these graduates is Mr. Lyndon Recera, who is the 2015 and 2017 UAE Barista Champion in Dubai and the only Filipino Barista who won in Dubai twice.

At present, Rey is developing a Coffee Innovation which comes from Coffee Waste from coffee shops which are the following;

  1. Coffee Charcoal for Grilled Meat
  2. Facial & Body Scrub
  3. First-aid kit
  4. Odor Neutralizer
  5. Plant fertilizer
  6. Teeth Whitening

Rey was convinced to learn more about this study when he traveled to New Delhi, India and in Colombo, Sri Lanka.

What ignited his knowledge in coffee waste recycling was the article which was written by a Former Purdue University associate campus minister, Rich Bruins, who discovered it in on a trip with students to Guatemala when they worked with coffee farmers. Rich Bruins a Mechanical Engineer and is the founder of Coffee Coals USA.

He also learned gained additional knowledge about this breakthrough after reading some articles from the Journal of the Canadian Dental Association about teeth whitening using charcoal and the other articles from the American Journal of Gastroenterology to which the author was Dr. Janice Rachael Mae of Health Guidance for Better Health.

Here’s a Brief Overview of the Coffee Innovations Rey Sumania came up with as mentioned above;

COFFEE CHARCOAL FOR GRILLED MEAT

This is a coffee waste product that was processed through dehydration and mechanical drying. Coffee charcoal for grilled meat is best for cooking grilled meat and is also ideal for corporate giveaways.

To use, just place the coconut shells or wood on the ground first then place the griller on top of it. After that, place at least 5-10 charcoal briquettes on top of the griller. The charcoal briquettes will help prolong fire energy.

Coffee Charcoal doesn’t burn like the intensity of ordinary charcoal (about 350 to 400 degrees, rather than 500 to 700 degrees), so there is a lesser chance for the meat to get burned too much, which has been linked to stomach cancer.

As a result of using this grilling method, the meat is juicier thus releasing a pleasant aroma depending on the variety of coffee waste. Another good thing about coffee charcoal is that it won’t give the meat an unpleasant taste even after over-cooking it.

FACIAL AND BODY SCRUB

Facial and Body Scrub is a coffee waste product that was processed through dehydration then dried mechanically for non-sensitive skin. It is not used nor extracted from fine, grind and lightly roasted beans to suit sensitive skin.

To Use:

BODY SCRUB 

  • Mix 3-5 tablespoons of extra fine grind coffee and 2 tablespoons of organic honey and/or organic virgin coconut oil then stir vigorously for about 3-5 minutes.
  • Rub to your body using loofah sponge for 5-10 minutes.
  • Rinse your body with warm water immediately.

FACIAL SCRUB

  • Mix 1 tablespoon of extra fine grind coffee and ½ tablespoon of organic honey together then squeeze 1 Calamansi into the mixture. Stir vigorously for about 3-5 minutes.
  • Apply and rub gently to your face or underarm for about 5 minutes.
  • This removes unwanted facial blemishes and also whitens the underarm and removes bad odor.

HAIR MOISTURIZER AND CONDITIONER

  • Mix together 2-3 tablespoons of extra fine, ground beans, and organic virgin coconut oil then apply to your hair.
  • Rinse with warm water then start applying your regular shampoo.
  • You may also add the mixture directly to your regular shampoo.

Important reminders: Apply the scrub to your pulse or wrist first before applying to your face if you have a sensitive skin.

FIRST-AID KIT

First-aid Kit is a French roasted coffee waste product that was processed through dehydration then dried mechanically. To use, mix charcoal with aloe Vera gel then apply to the affected or wounded body part.

You can also apply it to the open wounds directly. Apply to minor cuts or wounds in your body. It helps soothe skin irritation or mosquito bites.

ODOR NEUTRALIZER

Odor neutralizer is a mixture of mechanically-dried coffee waste and ground lightly roasted beans.

Benefits of Usage

  1. Refrigerator
  • It neutralizes the bad odor of the fridge due to stored meat or other food items.
  • Helps maintain the fresh aroma of your refrigerator.
  1. Cabinets
  • It neutralizes the odor of your food cabinet.
  1. Pet cage
  • Place the odor neutralizer beside the cage and make sure that it is not accessible to your pets.
  • This one helps prevent or minimize the bad odor coming from pets.
  1. Shoes
  • If you place this neutralizer inside your shoes overnight or after using your shoes, it will help minimize or control bad smell.
  1. Kitchen
  • Helps keep the kitchen smelling fresh after using.

PLANT FERTILIZER

It is a coffee waste product that was processed through dehydration and mechanical drying.  It contains natural Nitrogen, Phosphorus, and Potassium.

This plant fertilizer is good for indoor plants and culinary herbs. To use, just apply 5 grams or 1 tablespoon to each plant every week or month depending on the actual appearance of the plant.

TEETH WHITENING

It is French Roast beans that are so fine, to the point of carbonation and grounded to extra fine texture.

To use, apply a small amount to your regular toothpaste, mix them together or directly apply to your teeth using your fingers. Use this after meals or before bedtime. This product cleanses and whitens teeth and promotes good oral health.
